A different structure fails in a different way
A slab is one rigid element. When the ground under part of it softens, the whole thing tilts and the damage shows up as cracking and doors that stop closing.
A pier-and-beam house is dozens of separate supports carrying beams that carry joists. When the ground under one support softens, that support settles on its own and its neighbours do not. So the floor develops a local dip rather than a general tilt, the structure loses stiffness, and you feel it underfoot before you see it on a wall.
The tells are consistent: a floor that slopes toward one area, noticeable spring or bounce when you walk across a room, gaps opening between skirting and floor, and doors within the house behaving inconsistently rather than all leaning the same way.

The shim problem
Shims are legitimate. Packing a small deficit between a support and a beam is ordinary practice and there is nothing wrong with it.
